Raw honey is manually manipulated to control crystallization. Creamed honey contains a large number of small crystals made by grinding a generous amount with pestle and mortor to reduce the size of the crystals then whipped into liquid honey as a seed starter to produce a honey with a smooth spreadable consistency.
